The title of this salad says it all. I came up with this in my desperation to have fast, healthy food. I recommend shredding large amounts of the vegetables to have on hand when you’re in a pinch and need to stay on the healthy path. You can also use whatever veggies you like.
4 cups baby mixed greens
1/3 cup shredded zucchini
1/3 cup shredded carrot
1/4 cup cucumber, sliced and then quartered
1/2 an avocado, diced
3-4 ounces smoked, canned, or baked salmon
21 Seasoning Salute (Trader Joe’s) or similar like Mrs. Dash
Sea or Himalayan Salt
Fresh ground pepper
Bragg’s Ginger Sesame dressing or homemade dressing using extra virgin olive oil and apple cider or balsamic vinegar
Place veggies and salmon on a plate in order listed. Top with the seasonings and dressing to taste. Toss and eat!
